Our Wild
Blueberry
Cider Process
Our Blueberry Cider blends Nova Scotian Wild Lowbush Blueberries with Annapolis Valley Apples. These blueberries are picked at the peak of freshness and iced to maintain optimal flavor and nutrition through the production season. All equipment is cleaned and sanitized.
Batches of berries are then warmed to room temperature, crushed and blended with freshly pressed apple juice. This blend is then cold fermented in stainless-steel tanks utilizing specifically developed yeast cultures. Blueberries prepared in this manner retain health-boosting skin fibers, rich in anthocyanin and antioxidants.
Complete fermentation lasts between 14 & 17 days. The resulting fermented material is pumped through our basket grape press to separate the pulp from wild blueberry cider. The pulp is composted onsite.
Our wild berry cider is stabilized, clarified, filtered and canned. The entire process – fruit delivery to packaging – is completed within 6 weeks.
These high production standards and strict adherence to process enable consistently top quality, delicious cider throughout the year.
